Sweet potato & chickpea mash

With sliced green onion, veggie sausage and melted cheese on top. Yum, yum & yum!


Ingredients – makes 1 bowl

120g steamed or roasted sweet potato, peeled, mashed
100g chickpeas, cooked, drained, mashed
Half a green onion (scallion), finely chopped
1 vegetarian sausage of choice, cooked, chopped
2 tsp mayo of choice (I used egg free homemade)
Salt & pepper to taste
20g grated cheddar to top

Put everything in a bowl apart from cheese
Mix well, then season
Add cheese then melt under the grill or in the microwave

  1. This looks sooo hearty and warming! Sweet potato and chickpeas go so well together too šŸ™‚ I’d be really interested to know how you make your egg free mayo (if you don’t mind sharing, of course)?

    • Thanks for your comment. I use silken tofu, blended with a little mustard powder and garlic powder and drizzle in sunflower oil with the blender running until it emulsifies and thickens. Then salt to taste. Too much oil and you’ll have mayo soup. I got the recipe from another blog I forget the name of, one of the top results for googling “vegan mayo recipe”. They have 2 other versions on there too. Hope that helps x
